Miso Soup
Saucy Salmon Loaf with Cheese Sauce
Miso Soup

This traditional Japanese soup is staple of the Japanese diet. There are several variations.

Ingredients

  • 4 by 4 inch piece of seaweed, such as kombu or wakame (available at the health food store in packages)
  • 3 tablespoons dried fish flakes or small dried fish (known as iriki)*
  • 2 tablespoons miso (salty paste made from fermented soybeans; available at the health food store or Asian section of your supermarket)
  • 2 teaspoons tamari soy sauce
  • 1 teaspoon toasted sesame oil
  • parsley or chives (optional)
1. Bring 4 cups of water to a boil
2. Stir in the seaweed and fish flakes. Boil for five minutes.
3. Mix the miso, soy sauce and sesame oil.
4. Add the miso mixture, heat thoroughly and serve with a garnish of parsley or chives.

* Variations
Add small pieces of tofu and/or crab instead of fish flakes.
Add noodles at the beginning for a heartier soup.

Saucy Salmon Loaf with Cheese Sauce
(makes 5 servings)

  • 1 can (15 oz) pink salmon,
  • drained (reserve broth)
  • 2 cups soft bread crumbs (about 3 slices)
  • ¼ cup finely chopped onion
  • 1/3 cup chopped fresh parsley
  • ¾ tsp dried tarragon or savory
  • 3 eggs
  • ¼ tsp pepper
  • ½ tsp MegaKelp™ Roasted Kelp Flakes
  • ¾ cup hot liquid (salmon broth and milk)

In a large bowl, flake salmon with a fork, crushing skin and bones. Add breadcrumbs, onion, parsley and tarragon or savory. Mix well. Place mixture in a well greased non-stick 8 ½ x 4 ½ inch loaf pan. Beat together eggs, kelp flakes and pepper until eggs are just blended. Stir in hot liquid. Pour over salmon mixture in loaf pan. Bake in a 350° F oven for 30 to 35 minutes or till firm. Loosen loaf with a spatula and turn out of pan. Meanwhile make cheese sauce.

Cheese Sauce

  • 2 tbsp butter
  • 1¼ cups milk
  • 2 tbsp all purpose flour
  • ½ cup shredded Swiss cheese
  • Salt, dry mustard, cayenne pepper, to taste
Melt butter in a small saucepan over medium heat. Stir in flour and seasonings. Stir in milk. Cook stirring constantly until sauce thickens and comes to a boil. Cook 1 minute longer. Remove from heat. Add cheese and stir until smooth. Serve with salmon loaf.
